Lemon Tea Bread
This recipe was submitted by Lisa Kuhn Quinn, the Innkeeper of the Dormouse House Garden Bed and Breakfast in Villennes-Sur-Seine, Greater Paris, France
Ingredients: 1/3 c melted butter 1 c sugar 3 T lemon extract 2 eggs 3 c flour 1 t baking powder 1 t salt 1/2 c milk 1 1/2 T grated lemon rind 1/2 c toasted chopped pecans or walnuts Glaze: 1/4 c lemon juice 1/2 sugar
Directions: In a mixing bowl beat the butter sugar and extract to mix. Add the eggs and beat in. In another bowl mix dry ingredients and add alternately with the milk to the butter mixture, blending in. Do not over mix. Add in nuts. Pour into a 9x5x3 inch loaf pan and bake for 1 hr at 350 degrees. Remove from pan and pour over the prepared glaze. Cake will have cracks. Wrap in foil and store at room temperature for about 24 hours before slicing.
