Recipe : Sea Witch 3 Mushroom, Peppers & Cheese Strata |

Sea Witch 3 Mushroom, Peppers & Cheese Strata
Preheat oven to 350 F.
Ingredients:
1 each Red, Yellow and Orange Bell Peppers, Roasted, Pealed & diced
5 tablespoons olive oil
6 scallions, white and green parts thinly sliced separately
1 Large red onion sliced
½ pound fresh shiitake mushrooms, stemmed, caps sliced
½ pound fresh button mushrooms, stemmed, caps sliced
½ pound of Portobelo mushrooms, stemmed, caps sliced
1 cup shredded sharp white & yellow Cheddar & Parmesan cheese
Pour olive oil in large nonstick skillet over medium-high heat.
Add all onions sauté for about 2 minutes,
Add Yellow and Orange Bell Peppers, Roasted, Pealed & diced, and sauté until tender, about 8 minutes.
Add mushrooms and sauté until tender, about 4 minutes.
Season to taste with Season All & salt and pepper. Cool.
2 cups half and half
8 large eggs or Eggbeaters
2 tablespoons chopped fresh thyme
1 1/2 teaspoons salt
3/4 teaspoon ground black pepper
In a bowl whisk together eggs, half-and-half , 2 tablespoons chopped fresh thyme, 1/2 teaspoons salt, 3/4 teaspoon ground black pepper
Spray PAM on a 13x9x2-inch glass baking dish.
1 to 1& ½ Loafs of CHALLAH bread sliced into ½ slices from center portion of bread, reserving ends for another use,. Arrange bread slices in one layer in baking dish, squeezing them slightly to fit.
1 cup shredded sharp white & yellow Cheddar & Parmesan cheese
9 ounces soft fresh cream cheese (1 tub)
Spread ½ of the 9 ounces soft fresh cream cheese (1 tub)
Place half of bread mixture in single layer in prepared glass baking dish
Top with half each of mushrooms, peppers & Onion Mixture,
Sprinkle ½ of the sharp white & yellow Cheddar & Parmesan cheese,,
Pour ½ Liquid mixture evenly over the First Layer
Repeat layering with remaining bread
Top second layer with the remaining half each of mushrooms& Onion Mixture
Sprinkle Remaining ½ of the sharp white & yellow Cheddar & Parmesan
Pour remaining ½ Liquid mixture evenly over
Spread 1 Jar of Harry & David Pepper & onion Relish over the top
(Can be prepared 1 day ahead. Cover and refrigerate.)
Bring the Strata to room temperature before baking.
Bake in a Preheated oven ( Pure Convection) to 350 F. uncovered, in middle of oven until puffed and edges are pale golden, 60 minutes.
Slice down the middle lengthwise then cut crosswise every two inches- use a knife around the edges before you lift out each slice.
Garnish & Serve with Hollandaise Sauce and a sprig of Rosemary immediately.
Makes 10-12 servings. |
