  Recipe : Koshare Casserole

The guests at Casa de Koshare Bed & Breakfast love this tasty Southwest recipe. For the daring I add more hot peppers and also serve with a green chili or tomato salsa.

1 lb. Spicy breakfast sausage
1 6 oz. can tomatoes and chilies with juices
1 package of frozen hash browns (Hash browns should be about one inch deep)

8 large eggs (2 cups egg substitute)
¾ cups flour
2 teaspoons baking powder
½ teaspoon salt
1 teaspoon chopped garlic
2 cups pasole (corn)
12 oz. sour cream
12 oz. cottage cheese
3 cups Cheddar/Monterey jack cheese
1 small green onion finely chopped


350-degree oven

Place frozen hash browns in greased 9x13 baking dish. Cook about 20 minutes (till brown). This step can be completed the night before and the baking dish covered and put in freezer. Take out in morning and place in oven when you start to pre-heat.


In skillet, cook sausage until browned. Drain off excess oil, Stir in tomatoes and chilies. Set aside

Beat eggs; add flour, baking powder, salt, garlic, pazole, sour cream, and cottage cheese, mixing well. To this mixture, add cheese. Stir in sausage mixture.

Pour in 9/13 baking dish. Bake for 60-75 minutes.
