Recipe : Lemon Waffles with Blackberries |

Amount Measure Ingredient -- Preparation Method

2 1/2 c blackberries
2 tbsp sugar
2 c flour
1/4 c sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1 c lemon yogurt, lowfat
3/4 c milk
2 eggs -- room temp
5 Tbsp butter -- melted
2 tsp lemon zest -- grated
Prepare the topping: Place the blackberries in a glass bowl. Sprinkle sugar over and sir to combine. Using a wodden spoon, mash the berries to bring out their juice. Let stand at room temp until ready to serve.
Combine flour sugar, baking powder, and baking soda. In another bowl, whisk together the yogurt, milk, eggs, butter and lemon zest. Pour this mixture into the dry ingredients, stirring to form a smooth batter.
Prepare waffles. Transfer to warm serving plates and top with blackberries. Dust with confectioners' sugar.
