Preheat oven to 400
· 1 unbaked refrigerated pie crust
Roll out on parchment paper.
In bowl, combine:
2 T sugar
1 T all purpose flour
Sprinkle over the dough.
4 large crisp mountain apples, peeled, cored, and cut into ¼ inch thick slices
Arrange apples on top of dough in overlapping circles to within 3 inches of the edge of the dough.
Fold the dough over edges
Brush the apples with melted butter and sprinkle with 1 ½ T sugar.
Chill 10 minutes.
Bake at 400 for 1 hour. Brush apples with melted currant jelly. Can be baked the day before and refrigerated. Reheat at 325 15-20 minutes before serving.
