2 cups flour
½ cup oatmeal
2 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
½ tsp ground nutmeg
2 tsp ground ginger
pinch salt
2 large eggs, separated
2 ½ cups buttermilk
2 Tb melted butter
1 Tb sugar
2 tsp dark molasses
Beat eggs with buttermilk, butter, sugar and molasses. Add flour and spices. Beat until well mixed.
Cook on a griddle until tops are full of bubbles and then flip and cook for another 1-2 minutes until golden brown.
Serve with warm lemon sauce (see recipe below).
Lemon Sauce
In a small pan, mix one cup of sugar with 2-3 Tb cornstarch. Add 2 cups of water and bring to boil over high heat. Remove from heat and add 4 Tb butter, 2-3 Tb grated orange zest, and ¼ cup lemon juice. Stir until the butter melts. Serve. May be stored in a container in the refrigerator for a week or so and re-heated.
