Ingredients:
3 eggs + 3 egg whites
1/2 cup low-fat cottage cheese
2 1/2 cups frozen, shredded hash-brown potatoes
1 1/2 cups shredded Swiss Cheese
1/3 cup milk
5-7 green onions, thickly sliced
3/4 tsp salt
1/8 tsp pepper
4-6 drops Tabasco sauce
1/2 cup corn flake crumbs mixed with 1 TBS canola oil
Directions:
Beat eggs until foamy. Stir in potatoes, cheese, milk, onion, salt, pepper Tabasco. Pour into greased 9" pie pan. Sprinkle corn flakes on top. Cover and refrigerate overnight. Bake uncovered at 350° F for 50 miniutes or until knife comes out clean. Serves 4 to 6 You can add 1/2 cup chopped green /or red pepper for more color and flavor.
