"Gourmet" magzaine featured these pancakes in the "You Asked for It" section of the June 2005 issue. They are golden brown and crispy on the outside and creamy and tangy inside - a real delight, and our number one recipe request!
1 cup cottage cheese
1/2 cup flour
6 tablespoons melted butter
4 eggs
Combine all ingredients into a slightly lumpy batter. Pour with 1/4 cup measure onto very hot greased griddle. Turn when first sides are golden. Serve with warm Vermont maple syrup.
Serves 4 people (approx 20 small pancakes total).
To make this recipe for a bigger crowd, work in batches - they will keep warm on a platter in a 200F oven.
