Puff Pancakes
3 eggs
½ cup flour
½ cup milk
½ teaspoon salt
2 teaspoons almond extract
3 Tablespoons butter
PREHEAT oven to 425 degrees.
Grease (w/ Crisco lard) two Corningware crocks or 8” pie tins.
In small bowl, beat the eggs, stir in the flour, then milk, then salt and almond extract. Melt butter (microwave?) and add.
IMPORTANT – SPRAY greased crocks w/ non-stick vegetable oil cooking spray.
Pour batter mixture equally into crocks.
Bake 15 – 20 minutes.
Serve w/ fruit-flavored syrup, and/or fill with fruit compote (heat in saucepan on low, or in microwave, some frozen fruit with berry syrup, mace and almond extract.) You can also slice ripe bananas into the “cup.” Top w/ powdered sugar and/or sliced almonds, and/or whipped cream and enjoy!
