Our version of the traditional "war cake", popular during war times when eggs, milk and butter were scarce. We've spiced it up a bit and made a healthy, cruelty-free cake for celebrating peace times!

Ingredients

1 c real brown sugar
1/2 c water
1/2 c raisins
2 Tbsp margarine
1/2 tsp vanilla
1/2 tsp cinnamon
1/8 tsp nutmeg
1/8 tsp cloves
1 1/2 c flour
1/8 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
1/2 c chopped walnuts

Directions:

1. Place sugar, water, raisins, margarine, vanilla and spices in a heavy-bottomed saucepan and bring to a boil.

2. Lower heat and simmer for five minutes, stirring occasionally.

3. Remove from heat and cool to room temperature.

4. Preheat oven to 350 degrees and oil one loaf pan.

5. In a large bowl, mix together flour, salt, baking powder and soda. Add to the cooled sugar mixture and beat well until batter is smooth and no trace of dry ingredients are left.

6. Stir in walnuts and pour into loaf pan.

7. Bake for 45 minutes or until a toothpick inserted in center comes out clean.

8. Cool for ten minutes in pan then turn out onto a wire rack and cool completely before cutting.
